Easy Strawberry Graham Float (No-Bake Dessert)

If you're looking for an easy dessert that feels a little special, this strawberry graham float is one of my favourites. It’s made with simple layers of graham crackers, strawberries, and lightly sweetened whipped cream, but together they create something so creamy and delicious. The best thing about this dessert is there's no baking required, making it perfect for warm days or whenever you're craving a quick homemade treat. After several hours of chilling, the graham crackers soften into a cake-like texture and the flavours come together beautifully. Trust me, once you take that first spoonful, you'll understand why this dessert never lasts long!

Tip #1

Don't over-soak the graham crackers
Dip the graham crackers quickly into the milk. They only need a light coating, as they'll continue to soften while chilling in the refrigerator.

Tip #2

Use chilled heavy cream
Cold heavy cream whips faster and creates a lighter, fluffier filling. For best results, chill the mixing bowl and beaters before mixing as well.

Chill overnight for the best texture
While the dessert can be served after 4 hours, an overnight chill gives the graham crackers time to soften completely and allows the flavors to meld together beautifully.

Strawberry Graham Float Recipe

Preparation Time: 20 minutes
Chilling Time: 4 hours (or overnight)
Yield: 4 servings

Ingredients

  • 125g graham crackers (15–20 rectangular pieces)

  • 200g fresh or frozen strawberries, sliced

  • 1 cup (240g) chilled heavy cream

  • 3 tbsp condensed milk (adjust to taste)

  • ¼ cup (60ml) milk or heavy cream (for dipping the graham crackers)

Preparation

  1. Wash and slice the strawberries into small pieces. If using frozen strawberries, thaw slightly before slicing.

  2. In a large mixing bowl, combine 1 cup chilled heavy cream and the condensed milk. Using an electric mixer, whip until medium peaks form. The cream should hold its shape while the tip gently curls over.

  3. Pour ¼ cup milk or heavy cream into a shallow plate or bowl.

  4. Quickly dip each side of the graham crackers into the milk or heavy cream, just enough to lightly moisten them. Arrange a layer of graham crackers on the bottom of your serving dish.

  5. Spread a layer of sliced strawberries evenly over the graham crackers.

  6. Spoon a portion of the whipped cream mixture over the strawberries and spread evenly to cover.

  7. Repeat the layers. Continue layering dipped graham crackers, strawberries, and cream until all ingredients are used, finishing with a layer of cream on top.

  8. Crush a few graham crackers into fine crumbs and sprinkle them evenly over the surface. Garnish with additional strawberries if desired.

  9. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften and the flavours to meld together. Serve and enjoy chilled. 🍓✨
